Recipe For Deep Fried Ice Cream
So you want to try deep fried ice cream or at least you may be looking to find a recipe for deep fried ice cream. There seems to be a few ways to deep fry ice-cream, one with crushed nuts and or cornflakes or the Asian method of using a tempura batter. I have tried deep frying ice cream both ways. I have a preference for the Asian style.
Deep fried Ice Cream is more common that you may think and is often found in Mexican, Japanese and Thai restaurants. Any flavour of ice cream can be used, it's all up to your imagination. The same goes with the sauce you choose to go with your deep fried ice cream.
I like to use a simple fruit coulis which you can make simply by boiling up a cup of chosen fruit (berries are best) with ½ cup sugar and 2 tablespoons of water. Bring to the boil and simmer gently for around 20 min. Push through a fine sieve and there is your sauce. Serve hot or cold.
I like to have the contrast of cold sauce, hot batter and cold ice cream. Very cool.
Main things to remember is, nice hot new clean oil and very well frozen ice cream that has been prepared at least 1 day before and stored in the very bottom of your freezer where it is nice and cold..
